This delicious tomato, veg and lentil soup was super easy to make and it tasted amazing!
I needed an easy dinner last night and this is how it went...I chopped up the following:
6 Potatoes (white, red or blue)
1 medium Sweet Potato?
1 Red Capsicum
1 medium Brown Onion
Added the vegetables to a saucepan with:
1/2 cup of frozen Peas
1/2 cup Tomato Puree
3 cloves of Garlic, crushed
Pinch of Black pepper
Pinch of Celtic Sea Salt
Topped with Spring Water? until all of the veggies were fully submerged.
I simmered it for 20 minutes and then added 2 cups of cooked green lentils and simmered for another 10 minutes until the soup thickened. If you need to add a little more water you can do that if it gets too thick. Check your salt levels and adjust if needed.
Then I made a really simple cashew cream by adding a handful of Raw Cashews and enough water to cover them. I blended this until it was smooth and creamy.
I served the soup into a bowl and garnished with finely chopped Parsley and a good drizzle of Cashew Cream!
100% plant based and all organic!!?
