This is a fresh nourishing salad ideal for eating in those hot summer months:
4 Kale leaves
1 handful Red Cabbage
1/2 Red Capsicum
1/8 cup Hemp seeds
100ml Cold Pressed Olive Oil
1 tablespoon Cider Vinegar
1 teaspoon Balsamic Vinegar
1/2 teaspoon Celtic Sea Aalt
1/2 teaspoon crushed Garlic
1. Coarsely chop Kale leaves into bite size pieces.
2. Thinly slice the cabbage and cut the capsicum , tomato and cucumber into small pieces and combine in a large bowl.
3. Next add all of the dressing ingredients into a blender or NutriBullet and blend briefly before pouring over the salad.
4. Toss the salad through the dressing and then sprinkle the hemp seeds over the salad before serving.
